This unique coffee undergoes an advanced fermentation process using Nuruk, a Korean fermentation starter typically found in soju production.


Our coffee manager, Brian, says this is one of the most strawberry forward coffees he has ever tasted and has incredible complexity and layering of flavors; reminiscent of biting into a strawberry mochi, with layers of complex flavors and enchanting aromatics.


Benitez's meticulous processing techniques, particularly the innovative washed thermal shock method, ensure a nuanced layering of flavors. This unique process, involving rapid temperature changes post-fermentation, enhances the coffee's absorption of diverse flavors.
