This fruity and sweet Castillo is a fantastic representation of how advanced processing can elevate coffee quality! We taste sweet tropical acidity, apple sweetness, layered sweetness, and a pear like acidity. When cooled, the cup becomes much more structured and the acidity seems to shift in a sweetness direction.This coffee is a great intro into El Paraiso's fermentations and your entire room will smell great when this coffee is brewed.

Started by the now world-renowned Diego Samuel Bermudez, El Paraiso's commitment to controlled design fermentation has produced memorable profiles that they are successfully able to repeat year after year. 

This lot's iteration is a very colorful one: sweet peach and pear drive the cup with a lovely, rich candied apple base. This coffee is perfumed and pleasant, and one that we enjoy especially as an iced coffee.
