This week’s Secret Stash is an advanced processed Indian coffee from producer Ashok Patre/Ratnagiri Estate roasted by Driftaway Coffee (Brooklyn, New York). This is a SCOBY Anaerobic processed Catuai that has expressive flavor notes of: Rosewater, Apricot, Cherry, and Lavender! 


I think this might be the most impressive & expressive Indian coffee you’ll taste this year and it’s a perfect example of how processing elevates coffee quality. This coffee is LOUD with rosewater and lavender forward aromatics when you brew it. When hot, the cup is sweetness forward, then you taste layered processing with underlying rose/lavender, and a stone fruit acidity in the finish. Everything is well tied together and that’s what has impressed me the most. Once cooled, the stone fruit acidity becomes structured and you are tasting rosewater/lavender processing balanced with stone fruit acidity. You can 100% push this coffee and I recommend you play recipes.
