This release of Secret Stash is an incredible blend of Guatemalan Geshas (2 washed + 1 honey) from Christopher Feran’s roastery Aviary. The result is a super dynamic and vibrant cup bursting with crisp raspberries, citrus, all tied to a jasmine tea profile that has a floral and clean finish. When cooled, the acidity is incredibly layered presenting both red fruits and tropical notes. I find the dynamic presentation of acidity in this blend to be the most interesting part. There’s a lot happening in this cup and I’m excited for you all to taste! Christopher cupped through 18 different lots before creating this blend and we’re one of the first to be featuring it.
Please let this coffee rest for at least 3 weeks before brewing! The acidity is going to become much more dynamic and pop. We suggest you experiment with different recipes such as a coarser and faster flowrate.
