We are excited to collaborate with SEY Coffee for this limited release! SEY is a contemporary microroastery based in Brooklyn, New York that focuses on sourcing and roasting the highest caliber of coffees in a transparent and expressive way.
In the cup we find a structured acidity with notes of Lemon Candy, Nectarine, Fresh Herbs and a sweet and clean finish. When hot, the coffee has an upfront presentation of sweetness enveloping a yellow fruit acidity. Once cooled, a vibrant nectarine acidity appears and the finish becomes even sweeter and cleaner. We think this coffee is a great representation of how clean coffee can have expressive attributes and hope you enjoy every cup!
Our Take:
We recommend resting this coffee for a minimum of at least two weeks and find the coffee to perform best toward 4-6 weeks after roast! We also froze a portion of this coffee to save later batches for you all to enjoy. Let us know if you liked this coffee!
