This year's Valentine's Day release is a blend of coffees from El Vergel Estate roasted by Pair Cupworks (Mesa, AZ)! The ripest coffee cherries are picked and undergo a honey process and then are fermented with strawberries and yeast for 5 days, creating a dynamic and sweet profile. We taste bright and sweet strawberries, milk chocolate, honey, citrus acidity, followed by a sweet brown sugar finish. When cooled, there is fantastic structure of red fruits and the cup becomes even sweeter. This is a perfect coffee to try this Valentine's Day and is a great example of advanced processing in coffee!

 

For optimal brewing results we recommend you rest this coffee for 2-3 weeks

 

 

Additional Processing: 


The process starts with hand sorting to select only ripe cherries and remove impurities like leaves or stones. The cherries then undergo a 24-hour pre-fermentation in plastic bags, followed by 24 hours of fermentation in cherry. After depulping, the beans are co-fermented anaerobically for 5 days with their mucilage, combined with yeast and strawberry flavors, boosting the honey process with rich fruit flavor.
